Recipe: Veggie Sausage Patties

INGREDIENTS
- 1 (14 oz) can lentils, drained
- 3 cups vegetable broth (or water)
- 1 cup rolled oats
- 1 cup ground flaxseed
- 2 tablespoons maple syrup
- 2 tablespoons tamari or soy sauce
- 2 teaspoons smoked paprika
- 1 teaspoon ground sage
- 1 teaspoon dried thyme
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1 pinch ground cloves
- ½ teaspoon cayenne pepper
- ½ teaspoon fine sea salt
- ½ teaspoon black pepper
- 1-2 tablespoons avocado oil
INSTRUCTIONS
- Place all ingredients (except avocado oil) in a food processor and pulse until just combined.
- If the mixture seems too dry, add water, a tablespoon at a time. If the mixture seems too wet, add more oats, a tablespoon at a time.
- Heat oil over medium-high heat in a skillet.
- Scoop two tablespoons of the mixture at a time and place in the hot oil, gently pressing down with a fork to make a patty.
- Cook until golden brown, flip, and continue cooking until cooked through.
